Ingredients:
- 1 pound ground beef
- 4 hamburger buns
- 4 slices of bacon
- 1 red onion, sliced into rings
- 1 cup cotija cheese, crumbled
- 1 avocado, mashed
- 1 tomato, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- Cooking oil for grilling
Instructions:
Preheat your grill to medium-high heat
While the grill is heating, cook the bacon in a skillet over medium heat until crispy
Remove and drain on paper towels
Brush the onion rings with a little cooking oil and grill them for about 2-3 minutes per side until they have grill marks and are softened
Remove from the grill and set aside
Divide the ground beef into 4 equal portions and shape them into burger patties
Season with salt and pepper
Place the burger patties on the grill and cook for about 4-5 minutes per side for medium-rare, or to your desired level of doneness
While the burgers are cooking, mix the mashed avocado, finely chopped red onion, cilantro, lime juice, salt, and pepper to make the guacamole
When the burgers are almost done, place a slice of cotija cheese on each patty and allow it to melt slightly
Toast the hamburger buns on the grill for about 1 minute until they are lightly browned
To assemble the burgers, spread a generous amount of guacamole on the bottom half of each bun
Place a cheese-topped burger patty on top of the guacamole
Add a slice of tomato, a few grilled onion rings, and a slice of crispy bacon on top of the burger patty
Top with the other half of the hamburger bun, and serve hot
