Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 cup green beans, cut into 1-inch pieces
- 1 can 14 oz diced tomatoes
- 6 cups vegetable broth
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz cannellini beans, drained and rinsed
- 1 cup small pasta like ditalini
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1 cup spinach, chopped
- 1/4 cup fresh parsley, chopped
- Grated Parmesan cheese for serving
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onion, carrots, celery, and garlic
Saut until vegetables are softened
Stir in zucchini, green beans, diced tomatoes, and vegetable broth
Bring the soup to a boil, then reduce heat and simmer for 15 minutes
Add kidney beans, cannellini beans, pasta, oregano, basil, salt, and pepper
Cook until pasta is tender
Stir in chopped spinach and parsley
Cook for an additional 2-3 minutes until spinach wilts
Adjust seasoning if needed
Serve hot, topped with grated Parmesan cheese
