Ingredients:
- 2 medium sweet potatoes
- 1/2 cup coconut cream
- 1 teaspoon ground cinnamon
- 1 tablespoon honey optional
- 1/4 teaspoon sea salt
- 1 tablespoon coconut oil
Instructions:
Set the oven temperature to 375F 190C
Sweet potatoes should be washed, peeled, and then cut into 1-inch cubes
Combine the sweet potato cubes, coconut oil, and a small amount of sea salt in a bowl
Arrange the sweet potatoes on a baking sheet covered with parchment paper, then roast them for 25 to 30 minutes in a preheated oven, or until they become soft and have a hint of caramelization
Heat the coconut cream in a small saucepan over low heat while the sweet potatoes are roasting
Add the ground cinnamon and honey, if using, and stir
After cooking, take the sweet potatoes out of the oven and allow them to cool slightly
Drizzle the roasted sweet potatoes with the cinnamon cream sauce before serving
