Ingredients:
- 1 cup cooked brown rice
- 1 can 15 oz black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup diced red onion
- 1/4 cup diced bell pepper any color
- 2 cloves garlic, minced
- 1 tsp cumin powder
- 1/2 tsp chili powder
- Salt and pepper to taste
- 4 burger buns
- Lettuce leaves
- Tomato slices
- Red onion slices
- Sliced avocado
- Your favorite burger sauce
Instructions:
In a large mixing bowl, mash the black beans using a fork or potato masher until mostly smooth, leaving some chunks for texture
Add cooked brown rice, breadcrumbs, diced red onion, diced bell pepper, minced garlic, cumin powder, chili powder, salt, and pepper to the mashed black beans
Mix everything together until well combined
Divide the mixture into four equal portions and shape them into burger-sized patties
Heat a grill or skillet over medium-high heat and lightly grease it with oil
Place the black-bean and brown-rice cakes on the grill or skillet and cook for about 4-5 minutes on each side, or until they are heated through and have a nice crispy exterior
Assemble your burgers by placing a lettuce leaf on the bottom half of each burger bun, followed by a black-bean and brown-rice cake patty, tomato slices, red onion slices, sliced avocado, and your favorite burger sauce
Top with the other half of the burger bun and serve hot
