Ingredients:
- 1 3/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup semi-sweet chocolate chips
Instructions:
Preheat your oven to 350F 175C
Line a muffin tin with paper liners
In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt
In a separate bowl, combine the vegetable oil, eggs, and vanilla extract
Mix well
Add the wet ingredients to the dry ingredients and stir until just combined
Gently fold in the buttermilk until the batter is smooth
Fold in the semi-sweet chocolate chips
Fill each muffin cup about 3/4 full with the batter
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean
Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
