Best Minestrone Soup



A hearty and flavorful Minestrone Soup filled with vegetables, beans, and pasta. Perfect for a comforting and nutritious meal.

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green beans, cut into 1-inch pieces
  • 1 can 14 oz diced tomatoes
  • 6 cups vegetable broth
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz cannellini beans, drained and rinsed
  • 1 cup small pasta like ditalini
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 cup spinach, chopped
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese for serving

Instructions:

In a large pot, heat olive oil over medium heat

Add diced onion, carrots, celery, and garlic

Saut until vegetables are softened

Stir in zucchini, green beans, diced tomatoes, and vegetable broth

Bring the soup to a boil, then reduce heat and simmer for 15 minutes

Add kidney beans, cannellini beans, pasta, oregano, basil, salt, and pepper

Cook until pasta is tender

Stir in chopped spinach and parsley

Cook for an additional 2-3 minutes until spinach wilts

Ingredients:

  • 2 medium sweet potatoes
  • 1/2 cup coconut cream
  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey optional
  • 1/4 teaspoon sea salt
  • 1 tablespoon coconut oil

Instructions:

Set the oven temperature to 375F 190C

Sweet potatoes should be washed, peeled, and then cut into 1-inch cubes

Combine the sweet potato cubes, coconut oil, and a small amount of sea salt in a bowl

Arrange the sweet potatoes on a baking sheet covered with parchment paper, then roast them for 25 to 30 minutes in a preheated oven, or until they become soft and have a hint of caramelization

Heat the coconut cream in a small saucepan over low heat while the sweet potatoes are roasting

Add the ground cinnamon and honey, if using, and stir

After cooking, take the sweet potatoes out of the oven and allow them to cool slightly

Flag Ice Pops



These Flag Ice Pops are a fun and healthy treat for kids and adults alike, featuring layers of creamy Greek yogurt and colorful berries.

Ingredients:

  • 2 cups plain Greek yogurt
  • 1 cup strawberries, chopped
  • 1/2 cup blueberries
  • 1 tablespoon honey or maple syrup optional

Instructions:

Add Greek yogurt and honey or maple syrup to a bowl and mix them together

Fill up each popsicle mold about three quarters of the way to the top with yogurt

Put some chopped strawberries on top of the yogurt in each mold

More yogurt should be put into the molds until they are two thirds full

Put a few blueberries in each mold and gently press them into the yogurt

Add the last bit of yogurt to the top of each mold

Place popsicle sticks inside the molds

Put it in the freezer for at least four hours, or until it's completely set

For the popsicles to come out, run the molds under warm water for a second or two and then carefully pull the popsicles out

Ingredients:

  • 2 lbs pork ribs
  • 1 cup BBQ sauce

Instructions:

Take the ribs off the grill and let them rest for a few minutes

Then cut them into pieces

Passion Fruit Macarons

Ingredients:

  • 125g almond flour
  • 125g powdered sugar
  • 110g egg whites aged for 24-48 hours
  • 30g granulated sugar
  • Passion fruit puree from 2-3 passion fruits
  • Yellow food coloring optional
  • 1/2 cup unsalted butter room temperature
  • 1 1/2 cups powdered sugar
  • 1/4 cup passion fruit puree
  • 1 tsp vanilla extract
  • Pinch of salt
  • Extra passion fruit pulp for filling optional

Instructions:

Sift almond flour and powdered sugar together

Set aside

In a clean, dry bowl, beat the egg whites until foamy

Gradually add granulated sugar and continue beating until stiff peaks form

Add food coloring if desired

Gently fold the almond flour mixture into the egg whites until well combined

Be careful not to overmix

Transfer the batter into a piping bag and pipe small circles onto a parchment-lined baking sheet

Let them rest for 30-60 minutes until a skin forms on the surface

Preheat your oven to 300F 150C

Bake the macarons for 15-18 minutes, or until they lift easily from the parchment paper

While the macarons cool, make the passion fruit filling

Beat the butter until creamy, then add powdered sugar, passion fruit puree, vanilla extract, and a pinch of salt

Mix until smooth

Once the macarons are completely cool, spread or pipe the passion fruit filling onto one half of the macarons and top with extra passion fruit pulp if desired

Sandwich with the remaining macaron shells

Store in an airtight container in the fridge for 24 hours before serving to allow the flavors to meld

This Ultimate Sausage Pizza Dip is a savory and indulgent appetizer that captures the flavors of a classic sausage pizza in dip form. Perfect for parties, game days, or cozy nights in with friends and family.

Ingredients:

  • 1 lb Italian sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced

  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning

Instructions:

Warm the oven up to 190C 375F

Break up the Italian sausage into crumbles and cook it in a skillet over medium-low heat until it turns brown

To the skillet, add the minced garlic and diced onion

Cook until the onion is soft and clear

Then add the cream cheese, mozzarella cheese, Parmesan cheese, Italian seasoning, crushed red pepper flakes, salt, and pepper

Make sure all the cheeses are well mixed

Melt the cheeses and mix the ingredients together well

Put the mixture in a baking dish and make sure it's spread out evenly

Warm the oven up and put the dip in it

Bake for 20 to 25 minutes, or until the top is bubbly and golden brown

Before serving, top with chopped fresh basil

Warm it up and serve it with crackers, breadsticks, or tortilla chips
